  • 5 lb pork loin-spiral cut so that it resembles a sheet
  • Stuffing
  • 2 Tbsp. Unsalted Butter
  • 1/8 C. White Wine
  • Pinch of Salt, Pepper, Nutmeg
  • 1\2 bag baby spinach
  • 1 large yellow onion, chopped
  • 1 clove garlic, minced
  • 1\2 lb feta cheese, cubed

In large pan melt 1\8 stick of butter add spinach, white wine, salt, pepper and a pinch of nutmeg. In another hot pan sauté the onion with salt pepper and a little garlic till translucent. Add feta cheese and spread stuffing evenly over cut loin. Roll up loin tightly and tie with kitchen string.
Season outside with s+p and sear on all sides on a flat top grill.
