- 1/2 Gal. Tomatoes, peeled, diced and drained
- 2 Tbsp. Garlic, minced
- 3 Tbsp. Fresh Ginger, grated
- 2 tsp. Chili Flakes
- 2/3 c. Sugar
- 2 c. Apple Cider Vinegar
- 2 tsp. Cumin
- 2 tsp. Kosher Salt
- 1/3 Bunch Cilantro, chopped
Simmer tomatoes, garlic, ginger and chili flakes on medium heat until dry. Add sugar, vinegar, cumin, salt and reduce until thickens. Add cilantro and simmer for 2 minutes. Makes one quart.
