  • 1/2 Gal. Tomatoes, peeled, diced and drained
  • 2 Tbsp. Garlic, minced
  • 3 Tbsp. Fresh Ginger, grated
  • 2 tsp. Chili Flakes
  • 2/3 c. Sugar
  • 2 c. Apple Cider Vinegar
  • 2 tsp. Cumin
  • 2 tsp. Kosher Salt
  • 1/3 Bunch Cilantro, chopped

Simmer tomatoes, garlic, ginger and chili flakes on medium heat until dry. Add sugar, vinegar, cumin, salt and reduce until thickens. Add cilantro and simmer for 2 minutes. Makes one quart.
